Energy Bar with Nuts and Dried Apricots

Ingredients

300 g rolled oats

200 ml oat milk

120 ml bio coconut oil

130 g almond butter

100 g dried apricots

50 g bio almonds
-
50 g pumpkin seeds

3 tbsp bio chia seeds

100 g honey
-
1 1/2 tsp baking powder

a pinch of salt
Instructions:

Preheat the oven to 150°C and prepare a baking pan lined with parchment paper.

Melt the bio coconut oil in a water bath (double boiler).

While it is melting, chop the bio almonds, pumpkin seeds, and dried apricot pieces. In a bowl, mix the dry ingredients: rolled oats, dried apricots, nuts and seeds, baking powder, and a pinch of salt.

In a separate bowl, mix the already melted bio coconut oil with the almond butter, honey, and 200 ml of oat milk until you get a homogeneous mixture.

Add the wet mixture to the dry ingredients and mix well.

Spread the mixture in the baking pan lined with parchment paper and bake for about 15 minutes at 150°C or until the edges take on a golden hue.

Remove from the oven and let the mixture cool completely before cutting it into rectangular bars.
